When the Heiman family began making cheese for the Dairy in 1965, they continued that family tradition, and today three generations of the Heiman family continue their commitment to the art of cheesemaking. Ken Heiman is just one of 52 Master Cheesemakers in the state, after having achieved the status of Licensed Cheesemaker at age 16, and has been developing his skills ever since.
